INGREDIENTS
1 pack spaghetti
Olive oil
Salt
250 g takana (1/2 of separate recipe)
6 cloves of garlic, thinly chopped
2 tbsp dashi
1 tbsp soy sauce
1 teaspoon chilli flakes (optional)
METHOD
Bring a large pot of water, infused with a splash of olive oil and a pinch of salt) to the boil. Cook the spaghetti as per the packet instructions,
In the meantime, heat a generous portion of olive oil in a large pan or wok at medium heat.
Add the garlic to the pan and fry for 1 minute, then stir in the takana, dashi and chilli if using. Cook for 1-2 minutes.
Drain the spaghetti (save a little of the pasta water) and add it straight to the pan. Turn the heat to high, add in the soy sauce, and toss until evenly mixed. Add a splash of pasta water if needed.
Serve immediately. Serves 4.
