Haloumi and broad bean patties

INGREDIENTS 
3 cups fresh broad beans
3/4 cup plain flour
3/4 tsp baking powder
1/2 cup milk
2 eggs
180g haloumi, grated
2 tbsp fresh mint, chopped
2 spring onions, chopped
1/2 cup panko breadcrumbs
2 tbsp olive oil

METHOD
Boil the broad beans for 2 or 3 mins. Drain, allow to cool and remove the skins. With your hands, break up the beans roughly.

Combine the flour and the baking powder in a bowl. In a separate bowl, whisk together the eggs and the milk.
Now combine the two and whisk until you have a smooth batter.

Add in the beans, the haloumi, the onions, the mint and the breadcrumbs and stir to combine. 

With your hands, form into balls ( golf ball size). You should get about 10 -12.

Heat the oil in a large frying pan. Add in a few of the balls and with a spatula flatten into burger shapes. You may need to do this on 2 or 3 batches. Flip after about 2 mins. Lightly brown both sides. 

Serve hot. In the photo above the patties are served on a bed of baby spinach with a tomato and pine nut salad.
