INGREDIENTS
2 cups plain flour
1 tsp baking powder
1 tsp salt
2 tsp dashi powder
1.5 cups water
4 eggs
1 x 500g pack of coleslawix (cabbage and carrots) - discard the dressing
2 thin slices of pork per 'pancake' or 8 - 10 cooked peeled prawns per 'pancake'
Oil for frying
METHOD
In a large bowl mix the flour, baking powder and salt.
In a jug mix the dashi powder and water. Add the dashi mix to the flour mix and whisk into a batter. Place the bowl in the fridge for 1 hour.
I'm a jug, whisk the eggs then add to the batter and whisk to combine. Add in the coleslaw mix and fold together with a spatula until all the vegetables are coated in batter.
Heat some oil (1 to 2 tsp) in a frying pan over a medium heat. Add the meat (or seafood) to the pan then spoon 1/4 to 1/3 of the batter mixture over the top, smoothing it out into a round 'pancake' about 1 to 1.5 cm thick.
Cook for about 5 mins or until the pancake is easy to flip. Cook the other side.
Serve with okonomi sauce and kewpie mayonnaise.
