CHAHAN (FRIED RICE)

2 keys to this - use only Sesame oil and keep stirring!


If you like your rice spicy, add a chopped chilli with the garlic.

 

PREPARATION TIME: 10 minutes 

COOKING TIME: 5 minutes 

INGREDIENTS 
2 Eggs, beaten 

2 tbsp Sesame oil 

1 Large onion, finely chopped 

3 Cloves garlic, finely chopped 

OPTIONAL: Chopped cooked meat (ham, chicken or pork) 

1 or 2 cups Cooked rice (best if cold) 

Salt and pepper to taste 


METHOD 
In a wok or a deep frying pan, heat some oil. Add the egg and cook until done. 

Push the egg to the side and add the onion (and garlic) and fry until the onions start to brown. Add more oil if dry. 

Add the meat and stir, then add the rice. With a ladle, beat the rice down and stir frequently. Add oil if necessary. 

Keep beating the rice and stirring until the rice grains separate. 

Ladle individual servings of fried rice into a bowl and turn onto plates.
