Crunchy, spicy, salty - open a bottle of beer to go
with this!
INGREDIENTS
5 Sticks of
celery
2 or more Fresh
chillies finely chopped
6 tbsp Sea salt
METHOD
Wash the
celery, remove any 'strings', and split lengthwise before cutting into small
pieces.
Chop the
chillies.
In a large bowl
mix the celery, chilli and salt by hand. Set aside for 30 mins - until water
seeps out of the celery
Transfer the mixture
into a colander and wash thoroughly in cold water. Drain, transfer into a
sealable container and place in the fridge.
VARIATION - JAPANESE PICKLED CUCUMBER
Follow the same recipe with cucumber instead of celery.
