INGREDIENTS
1 & 1/4 cups plain flour
3/4 tsp baking powder
1/2 TSP salt
Pinch of cinnamon
140g raw sugar
90g soft butter
2 eggs
2 bananas, mashed
1/2 tsp vanilla extract
Olive oil spray
METHOD
Pre-heat oven to 180C (fan forced)
Dry mix
In a large bowl combine the flour, baking powder, cinnamon and salt.
Wet mix
In a large bowl whisk the sugar and butter together. Then add the eggs and whisk until smooth. Add the bananas and vanilla and fold together.
Add the wet mix to the dry mix and combine with a spatula.
Spray a small bread tin with the oil then pour in the cake mixture. Cook on the centre of the oven for about 50 mins or until a toothpick inserted into the cake comes out dry.
