3 Cheese pesto pasta bake

INGREDIENTS
  • 400 g pasta (eg penne)
  • 1 cup thick cream
  • 3 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 jar basil pesto
  • 1/3 cup parmesan cheese, gratef
  • 1/2 tsp salt
  • 1/3 tsp black pepper
  • 1 cup baby spinach leaves
  • 100g feta cheese, crumbled
  • 1 cup mozzarella cheese, grated
METHOD
In a large pan, bring water to the boil. Add a splash of olive oil and a pinch of salt. Cook pasta as per pack instructions minus 1 minute. Drain and run under cold water to cool (and prevent the pasta cooking further).

Pre-heat oven to 200C

In a large measuring jug combine the cream, garlic, paprika, onion powder, pesto, parmesan, salt and pepper.  Stir to mix.

In a large baking tray, combine the pasta, spinach and feta. Then pour the cream mixture over the top. Sprinkle with mozzarella, then place in the oven and bake for approx 30 mins until the cheese on top is browned lightly.
