INGREDIENTS
Base
250g of digestive biscuits (About 3/4 of a pack), placed in a plastic bag and crushed with a rolling pin
1 cup desiccated coconut
125g butter, melted
½ cup sweetened condensed milk
Icing
25g butter
3 or 4 passionfruit pulp
2 cups icing sugar
METHOD
Put the crushed biscuits, coconut, melted butter and condensed milk into a large bowl then mix well to combine.
Line a small tray with baking paper then pour in the base mixture. Push to the edges and press down with your fingers. Place in the freezer t9bharden for 30 mins or more.
Put the passion fruit pulp and the butter in a small saucepan and heat gently to melt the butter and soften the pulp. Pour into a bowl containing the icing sugar. Whisk until smooth.
Pour the icing over the chilled base and smooth to the edges. Return to the freezer until the icing has set. (About 1 hour.)
Cut into slices and serve. Store in the freezer.
