I like to serve this with a homemade cob loaf (see
recipe).
INGREDIENTS
1 cup Red
lentils
2 cups Water
1 Onion, finely
chopped
4 Cloves of
garlic, finely chopped
3 tbsp Butter
Salt and pepper
to taste
1 tsp Cider vinegar
METHOD
Wash lentils
and bring to boil in the water. Simmer for 20 - 30 minutes until soft. Drain
and set aside.
Gently fry the
onion and garlic in the butter over a low heat until soft, but not browned.
Season with salt and pepper. Add the lentils and warm through.
Add the vinegar
and mash with a potato masher until smooth.
Serve lentil
pate at room temperature with bread.
