OLIVE OIL CHOCOLATE CAKES


The olive oil makes these cakes fragrant and moist.

INGREDIENTS
1 cup Flour
1 cup Sugar
1/3 cup cocoa powder
1 tsp baking powder
1 Egg
1/2 tsp Salt
1/2 cup virgin olive oil
1/2 cup Milk
1 tsp vanilla essence
1/2 cup water (boiling)
½ bar cooking chocolate
Knob of butter
More boiling water

METHOD
Preheat the oven to 160C (140C fan forced).

In a large bowl, combine the dry ingredients (flour, sugar, cocoa, baking powder, salt) and stir.  Add the egg, milk, olive oil and vanilla, then stir until the mixture is smooth. While stirring, slowy add the boiling water until the mixture looks wet and shiny.

Grease a muffin tin with olive oil then spoon the batter into the cups.

Bake for 20-25 minutes,.  To check they are done, a toothpick stabbed into the middle of a cake should come out clean.   

Allow to cool for a few minutes, then remove the cakes to a wire rack.

Melt some chocolate with a knob of butter in a bowl in very hot water.  Dribble the melted chocolate onto the cakes and allow to cool.
