PANCAKES


American style pancakes. Where I am from these were called 'pikelets'. 

This recipe makes 10 pancakes.

 Make a stack and eat them with fresh fruit and cream, or with ice-cream and syrup.

PREPARATION TIME: 40 minutes
COOKING TIME: 15 minutes

INGREDIENTS
2 cups Self raising flour
1/3 cup Castor sugar
1/4 tsp Bicarbonate of soda
1&1/2 cups Milk
1 Egg
1/2 tsp Vanilla extract

METHOD
Mix the flour, bicarbonate of soda and sugar in a large bowl. Make a well in the centre.

Whisk the milk, egg and vanilla extract in a jug and pour into the flour mixture. Whisk until smooth, then cover with a towel and set aside for 30 mins.

Melt a little butter in a large non-stick pan over a lowish flame. Spoon in enough batter to make an 8cm pancake.

Cook for 2 mins or until bubbles appear on the surface of the pancake. Flip the pancake - it should be golden brown. Cook the other side for 1 minute.

Remove the pancake and keep warm. Melt a little more butter and repeat until all the batter is used.
