This is a great way to cook leeks - they turn out
sweet, soft and crispy all at once.
INGREDIENTS
2 Large leeks
4 Cloves of
garlic
Cracked black
pepper to taste
1 tbsp Butter
Boiling water
Pre-heat the
oven to 220C (200C fan-forced).
METHOD
Cut off the
roots and the green (leaving the lighter green). Wash away any dirt. Cut the
leeks lengthwise into halves and cut to the length of your baking dish.
Arrange the
leek halves cut face up in a baking dish. Finely chop the garlic and sprinkle
over the leeks. Grind some black pepper over the top. Place in the ove and
roast for 20 mins.
Remove from the
oven, add butter to baking dish and add boiling water to cover the base of the
dish but not cover the leeks. Cover the dish with foil and return to the oven.
Continue to
roast for 40 minutes, checking occasionally and adding a little boiling water
if the dish starts to dry out.
Remove from
oven and serve as is.
