Easy tuna pasta bake

INGREDIENTS
1 pack short pasta e.g. penne, cooked as per pack instructions minus 1 min.
1 large can tuna, drained
1 leek, quartered lengthwise and finely chopped
3 large mushrooms, sliced
I can condensed cream of mushroom soup. Add 1/2 can of water and 1/2 thickened cream (or a full can of milk)
Salt and pepper to taste
Grated mozzarella cheese - approx 1 cup.

METHOD
Pre-heat the oven to 190C. 

Combine all the ingredients except the cheese in a baking dish. Sprinkle cheese over the top.  Bake for 30 mins or until cheese is browned.

Serves 6

Variations: Swap to cream of chicken soup, chicken instead of tuna onion instead of leek or any combination of the above!
