Saag (spinach) bhaji

INGREDIENTS 
2 tbsp olive oil
1 tbsp butter
1 onion chopped
4 garlic cloves, minced
2 tsp ginger, minced
( Optional: 1 small chilli, chopped)
1/2 tsp ground cumin
1/2 tsp turmeric
1/2 tsp garam masala
2 tbsp tomato passata
1/2 cup vegitable stock 
a handful of fresh coriander chopped
1 1/2 cups of fresh spinach leaves, washed
Salt and pepper to taste

METHOD
Heat the oil & butter in a frying pan. Add the chopped onion and fry until it  browns. Add the garlic, ginger, (chilli), cumin, turmeric and garam masala and continue to cook for 1 min. 

Add the passata and the stock and stir to combine. Then add the coriander and spinach and cook, stirring often until the spinach is soft and the liquid has reduced by about half. 

Check the taste and add salt and pepper of needed.

Serve with jasmine rice.  Serves 2.
