Chicken and Daikon Niimono

A Japanese dish that we make in bulk for hungry kids. For an easier and much quicker version of this substitute diced chicken thigh for the chicken drumsticks and halve all the ingredients. That said, however quick you cook this it will taste much better the next day! Takana - Pickled mustard greens

INGREDIENTS 500 g (2 bunches) Mustard Greens (Kai choy) coarsely chopped 2 cups w ater (180ml Japanese cups) 2/3 cup r ice vinegar (180ml Japanese cups) 1/3 cup soy sauce (180ml Japanese cups) 2 tbsp s ugar 1 tbsp Salt 1 tsp dried c hili flakes METHOD In a small saucepan, combine water, rice vinegar, soy sauce, sugar, salt and chilli flakes. Bring to a boil, then take the pan off the heat and allow to cool. Put the chopped mustard greens in a large bowl. When cool, pour mixture over the mustard greens. Toss to mix and let sit for at least 2 hours. Do a taste test, and when happy, drain and throw away the liquid, transfer the greens to a sealable container and refrigerate. Can keep in the fridge for up to 2 weeks.

Halloumi and spinach pastry plait

INGREDIENTS 2 sheets of puff pastry, defrosted For the filling Knob of butter Splash of olive oil 1 leek, use the white part only, finely chopped 3/4 of a block of Halloumi (approx 200g), grated 1 cup panko breadcrumbs 1/2 tsp Italian herbs 100g of baby spinach leaves, roughly chopped 100ml of thickened cream 3 tbsp pine nuts For the glaze 1 egg, whisked Salt to taste METHOD In a frying pan, saute the leeks in the oil and butter until soft. Allow to cool for 5 mins. In a large bowl, combine all the ingredients of the filling, adding the cream last and mixing well to combine. With your hands form the filling into 2 logs and arrange on the 2 sheets of pastry. Cut diagonals in the pastry to make the plaits, folding the ends in first before alternating the plaits from each side. Place the two completed rolls on a baking tray lined with baking paper.
