INGREDIENTS
220g self raising flour
110g cold butter cut into cubes
55g caster sugar
3/4 cup of sultanas or other dried fruit
1 egg
Small amount of milk
Butter or oil for cooking
Additional caster sugar for dusting
METHOD
Blitz the flour and butter in a Nutribullet or equivalent. Remove to a large bowl and add the sugar and sultanans. Mix evenly, then add the egg and pull the dough together. If you need more liquid, add in a half eggshell of milk.
Once you have a dough, use your hands to flatten out the mixture to about 1 cm thick onto a flat surface and use a cookie cutter to cut the cakes. Depending on the size of your cutter you may get 6 to 12.
Heat a little butter or oil on a flat griddle or frying pan and cook the cakes at medium heat for 4 or 5ins each side.
Remove to a plate and dust with caster sugar.
