Fritelle di Pasta (left-over pasta fritters)

This is a recipe for using up left over spaghetti or linguine. I used left over Wafu (mixed mushrooms) Linguine. I had approx 3 cups leftover so adjust the recipe to allow for the amount of pasta you have

INGREDIENTS
3 eggs
100ml thickened cream
1/2 cup mozzarella cheese
1 cup panko breadcrumbs
3 cups left over pasta
Olive oil for frying
Chopped parsley for garnish
Grated parmesan cheese for garnish

METHOD
In a large bowl whisk together the eggs, cream and cheese. Then add in the breadcrumbs and pasta and mix together thoroughly with your hands.

Heat a little oil in a large frying pan. With your hands, make a ball of the mixture and place it in the pan. I was able to do 3 at a time. With a spatula, gradually flatten the balls down into the pan. Fry for 2 to 3 minutes, then flip and cook the other side.  Remove to a plate and cover to keep warm while you cook the rest. I made 9 fritters from what I had.

To serve, sprinkle with parsley and parmesan and match with a crunchy salad.
